Raw cacao nibs are made by removing the skin from the cacao seed (bean) and cracking it into small pieces.
Cacao is filled with dietary fiber, iron, calcium, chromium, zinc, manganese, copper, and potassium. It's one of the highest sources of magnesium, an essential nutrient necessary for circulation, muscle function and bone health. It's also one of the best sources of antioxidants, including polyphenols, catechins, and epicatechins. And for a nut or seed, cacao nibs contain a high amount of Vitamin C as well.
Another nutritional element that cacao contains is Phenylethylamine, or PEA. These heat-sensitive compounds are the same chemicals our body's produce when we fall in love. Maybe this is why chocolate and love have such a deep connection! PEAs also play a role in increased focus and alertness. The significant amounts of typtophan in cacao also add to it's "magical" mood-enhancing effects.
